Little known in Australia but quickly finding devotees, Pu-Erh tea is an opulent and luscious drink with a natural sweetness. Pu-Erh is my winter go to for its warming qualities. It’s also the reason I brought Tea Store to Australia; I couldn’t find a quality Pu-Erh Tea in Melbourne.
Hailing exclusively from the Yunnan province and reportedley named after Pu-Erh City in China, it is grown along the Lancang river. What’s special about Pu-Erh tea? Its leaves are aged for 10 years, nurturing a particular microbial fermentation that transforms the tea from a fresh, bitter green into something dark, mellow and rich.
Like wine making, Pu-Erh tea production is highly regulated to ensure the highest quality and authenticity.
The Koh Family has crafted Pu-Erh tea for over 100 years, expertly managing the fermentation and aging process.
Fresh tea leaves are hand tossed in giant woks long enough to halt oxidation, but not so long as to completely dry the tea nor kill the natural bacteria. The tea is sun dried then heaped in rooms to begin the aging process. The longer the storage, the better the tea.

Rinse your teapot and cups with hot water to warm them. Place 1 heaped teaspoon of tea leaves per person into a teapot or plunger and flush for a few seconds with fresh boiled water to open the leaves, discarding the water. Fill your teapot with freshly boiled water at 90-100 degrees and infuse for 2-3 minutes.
Pu-Erh can be used for multiple infusions so don’t throw out the leaves in a hurry.
Store tea leaves in a cool dry place; they get better with age.

Our Pu-Erh tea is from Yunnan Province, where premier Pu-Erh tea is grown in China. Once picked, the tea leaves are sun dried and fermented through heat and humidity. The leaves are then left to age.
Pu-Erh tea is characterised by an earthy flavour, full bodied palate and a copper red hue. It nicely balances an oily meal and is an ideal addition to a healthy diet.
Boil fresh water and flush over the leaves to ‘open’ them. Add a fresh amount of boiled water to the leaves and leave to infuse for 2-3 minutes. Pu-Erh can be used for multiple infusions so don’t throw out the leaves in a hurry!
